Eggs Portugal Casserole – Make A Day Ahead!


Looking for a perfect breakfast recipe that you can make the day before you need it?  Look no further, it doesn’t matter if you serve 2 or more, here it is–Eggs Portugal is a tried and true dish that is so tasty I can’t imagine people sharing less than a 5 star rating.

It came to my attention this morning when I noticed a friend on Facebook asking for an easy and delicious recipe for Christmas morning.  I thought of this recipe like a flash of lighting and was inspired to write this for a blog post.  This is my favorite breakfast recipe of all time, I’m sorry I didn’t post it sooner!

I’ve been married for almost twenty years and I believe we have had it for breakfast on Christmas day for 19 of the 20 years.  My mother in-law passed this down from her multiple years of making it.  Trust me, it’s a tradition in our household, and my family looks forward to it more than the Christmas dinner!

Let me add, I have altered this recipe over the years and tweaked it which has enhanced flavors and made it even simpler to prepare.  I will list different preparation options so you can suit it to your own taste and convenience.

One last thing I want to note, this can be used for everything from Thanksgiving, Christmas, Birthdays, special occasions and every day recipes when you just want to take breakfast up a notch.

Ingredients

Instructions
Bread, Cheese and Sausage
  1. Spray a 9 X 13 pan with non stick spray. Cut crust off of bread and discard. (I give mine to my chickens) Cut the bread into cubes and layer evenly on the bottom of the pan. Layer cheese and cooked sausage.
Eggs, Milk, Mustard
  1. Beat together eggs, milk and mustard. Pour over the bread, cheese and sausage. Cover and refrigerate over night for maximum absorption.

Cream of Mushroom Soup, Wine and Mushrooms
  1. The next morning. Preheat oven to 350 degrees. Blend soup and wine with mushrooms. If it's easier you can put the mushrooms right over the egg mixture and spread the wine and soup mixture over the top.
  2. Place in the oven for 1 hour until bubbly. I usually cover mine for half of the cooking time and remove it to let it cook faster towards the end.Take it out of the oven and allow it to set-up for 10 to 15 minutes. This step is important so it sets-up.
Recipe Notes

If you like the recipe as is, go for it and start cooking; otherwise I have some helpful tips and recipe variations listed below.  Happy cooking!

Tips:

  1.  It's a good idea to place a cookie sheet underneath the 9 X 13 dish to collect anything that may spill over.
  2. You can substitute fresh mushrooms for canned.  I prefer fresh as they have much more flavor; however canned mushrooms work in a pinch.
  3. Some people use Vermouth instead of a white wine.  Personally, I have white wine available for cooking all the time.  It's much easier and tastes great.  The alcohol content does cook out while it bakes if you are worried about little ones eating this.  It doesn't taste like alcohol, but it does help enhance a more bold flavor in the dish overall.  You could skip this ingredient but I don't encourage it, especially since it's such a small amount.
  4. Precooked sausage is easy and I have used it many times when I was in a hurry.  However, it's much better cooking your own, and you can cook this up a couple of days ahead of time.
  5. The original recipe only called for 1 can of Cream of Mushroom Soup.  I changed it to two as it gives it more moisture and also brought out more flavor.  If you only have 1 can on hand, you will be fine; however, 2 is much better.  The kids love it too!
  6. If someone doesn't like mustard, you can't taste it.  Nobody will notice if you use it unless you have allergies.
  7. All ingredients blended together make a nice combination, so no one single ingredient will over power the others which is why I love this recipe so much.

Variations:

  1. You can add onions, red or green peppers.  I personally do not.  My kids are not huge fans and this has enough going on in it anyways, but if you want more fresh vegetables, go for it.  The origins of this recipe from what I understand did include other fresh veggies.
  2. BACON!  BACON!  BACON!  Who doesn't love bacon!  You can add fresh bacon for bacon lovers.  If you have a house divided, why not use half bacon and half sausage?  I haven't tried it yet that way, so if you do please let me know how you like it!
